Osmosis is the diffusion of water across a selectively permeable membrane. Just as in the diffusion of gases, the net movement of water during osmosis is from the less concentrated or hypotonic solution to the more concentrated or hypertonic solution. When the solutions are isotonic, they have equal concentrations of substances. Although there will still be equal amounts of water movement in and out of the cell, the net flow is zero. Osmosis is essential in biological systems and provides the primary means by which water is transported into and out of cells. In fact, many animals have special adaptations for osmoregulation, the balance of water in an organism.

First read the entire procedure for Part 1 as found on pages 55-56. You will conduct this lab at home using unflavored gelatin in place of agar; red cabbage juice instead of phenolphthalein; sodium bicarbonate in place of sodium hydroxide; and acetic acid instead of hydrochloric acid. You will need to prepare the solutions as directed at the end of this lab. Complete Step 1 & 2 as indicated and using the substitutions as listed above. Answer the questions and record your observations appropriately in your laboratory investigations notebook. To design and conduct this section of the lab, you will need to design an experiment to test the predictions you made regarding the relationship of surface area and volume in the gelatin cells you created. You should collect both qualitative and quantitative data such as color changes and rate of diffusion. After you have completed your experiment, determine if the results support your predictions.
